Ingredients

For the pastry
150 grams Pastry flour
150 grams Quark
150 grams softened butter
1 pinch salt
For the topping
500 grams onions
500 grams Apple
2 Tbsps lemon juice
125 grams Bacon
2 Tbsps butter
salt
freshly ground peppers
1 tsp dried marjoram
2 eggs
150 grams Crème fraiche
100 grams Whipped cream
75 grams freshly grated Gruyere

Preparation steps

1.

For the pastry: combine flour with quark, butter and salt, process with a dough attachment of a hand mixer to a smooth pastry. Shape into a ball and refrigerate, covered, for about 30 minutes.

For the topping: peel and dice onions. Peel and quarter apples, core and dice, immediately sprinkle with lemon juice and mix well.

Cut bacon into small cubes. Heat butter in a pan and saute bacon for a few minutes. Add onions and saute until translucent. Add apples and saute for about 3-4 minutes. Season with salt, pepper and marjoram. Remove pan from the heat.

Whisk eggs with crème fraîche, cream and grated Gruyère.

Roll out pastry on lightly floured surface and line greased baking pan with it, making an edge all around. Spread onion and apple mixture on top and pour egg mixture over. Bake in preheated oven at 200°C (approximately 400°F) for about 30 minutes. Remove from the oven and serve.
