- 1 can Mandarin orange
- milk
- 1 pinch salt
- 80 grams butter
- 70 grams Pastry flour
- 5 eggs
- 60 grams sugar
- 1 Tbsp powdered sugar

Preparation steps
1.
Drain mandarins in a sieve.

Boil milk, salt and 50 grams (approximately 2 ounces) butter. Stir in flour and cook until mixture pulls away from edges. Cool slightly. Separate eggs and gradually stir in yolks. Beat egg whites until stiff sprinkle with sugar and fold into egg yolk mixture.

Heat 1 tablespoon butter in a pan. Pour in 1/4 of egg mixture and top with 1 tablespoon of mandarins. Cook omelet over low heat, flip and bake in a preheated oven at 200°C (approximately 400°F) on the top rack until golden brown. Dust with powdered sugar.

Repeat until all omelets have been made. Serve with remaining mandarins.
