- 4 large Eggs
- Pepper (from the mill)
- 2 tablespoons grated Cheese
- 4 tablespoons chopped Fresh herbs to taste (such as dill, chervil, parsley, chives, etc)
- 2 tablespoons Butter
- 2 Tomatoes (for garnish)
- 2 Parsley (for garnish)
Separate the eggs, mix yolks with salt, pepper, cheese and herbs.
Beat egg whites until stiff and fold into the egg mixture.
Heat butter in a pan, pour in the egg mixture, cover, then cook over low heat until the mixture is slightly solid.
Lay folded on a warmed plate and serve garnished with tomato slices and parsley.
