- For the pastry
- 2 cups all-purpose flour
- ⅔ cup cold butter
- ⅓ cup superfine caster sugar
- water
- For the filling
- ½ cup butter
- 1 ⅓ cups light brown sugar
- ⅓ cup Golden syrup
- 1 tsp vanilla extract
- 3 eggs (beaten)
- ½ lemon (finely grated zest)
- 2 cups finely chopped Pecan
- For the topping
- 1 cup finely chopped Pecan

Preparation steps

For the pastry: sift the flour into a mixing bowl and rub in the butter until the mixture resembles breadcrumbs. Stir in the sugar, then gradually add the water, until the mixture just comes together. Roll the dough into a ball, then wrap in cling film and chill for 30 minutes.

Preheat the oven to 180°C (160° fan) 350°F gas 4. Grease a deep 23 cm | 9" pie dish.

Roll out the pastry on a floured surface and line the dish.

For the filling: heat the butter, sugar, golden syrup and vanilla in a pan over a low heat until the butter has melted. Remove from the heat and leave to cool for 10 minutes.

Add the eggs and lemon zest to the mixture and stir well. Gently stir in the pecans.

Pour into the pastry case and sprinkle with the finely chopped pecans. Bake for 40-50 minutes until the pastry is golden. The filling be slightly soft, but will firm up as the pie cools.
