Preheat the oven to 180°C (approximately 350°F).

Soak the raisins in rum.

Peel and core the apples, then sprinkle with lemon juice. In a small bowl, mix the nuts with half the sugar and the cinnamon. Melt the butter in a saucepan,. Sprinkle the apples with a little butter and roll in the nut mixture. Press nut coating firmly and put the apples in a buttered baking dish. Drain the raisins and mix well with the rest of the sugar and 20g (approimately 3/4 ounce) of butter. Fill the apples with the raisin mixture, stick a cinnamon stick in each apple, then drizzle with the remaining melted butter. Bake for about 30 minutes. Remove from oven and let cool slightly. Serve immediately.
