- 150 grams Pastry flour
- 100 grams ground almonds
- 3 Tbsps Cocoa
- 80 grams sugar
- 125 grams cold butter
- 1 egg
- 1 Tbsp Whipped cream
- 100 grams dark Couverture
- chopped Pistachio

Preparation steps

Combine the flour, almonds, cocoa and sugar on a work surface and form a well in the center. Sprinkle the butter around the edges, place the egg in the center and knead everything to make a smooth dough. If the dough is too dry knead in a little cream. Shape the dough into cherry-sized balls, place on a plate and chill, covered for 1 hour in the refrigerator.

Place on a parchment paper-lined baking sheet and bake in an oven preheated to 180°C (approximately 350°F) about 10-12 minutes. Remove from the oven and allow to cool. Melt the chocolate over a hot water bath, dip one side of the cookie halfway into the chooclate, sprinkle with some of the pistachios and let stand on a wire rack until hardened
