- 1 kilogram clam
- 1 shallot
- 1 garlic clove
- sunflower oil
- 200 milliliters fish stock
- salt
- peppers (freshly ground)
- 400 grams Scallop (trimmed)
- XO sauce (from an Asian store)
- 350 grams Chinese Egg noodle
- 2 handfuls soybean sprout
- 2 handfuls Watercress

Preparation steps

Wash clams thoroughly. Peel and finely chop the shallot and garlic. Sauté shallots and garlic in 2 tablespoons of sunflower oil, then pour in the stock. Mix in the clams, season with salt and pepper, cover and simmer for about 8 minutes. Discard the clams that did not open.

Cook the egg noodles according to package instructions and drain. Heat in a wok 2-3 tablespoons of oil. Add the scallops and cook until golden brown. Add the noodles and fry briefly over high heat. Add the clams. Remove the wok from the heat and season everything with the Xo sauce to taste. Add a handful of watercress, mix together, and arrange on plates. Serve immediately with fresh watercress and sprouts on top.
