Nectarines with Star Anise

Preheat the oven to 180°C(160° fan)|350F|gas 4.
Combine the water, sugar, vanilla extract, and cinnamon in a saucepan.
Cook over a medium heat, stirring occasionally, until the sugar has dissolved.
Stud the nectarine halves with star anise and arrange, cut-side facing up, in a baking dish.
Pour over the syrup and roast the fruit for 40-45 minutes until tender to the point of a knife.
Remove from the oven and leave to stand for 5 minutes before serving.
