- 4 ½ cups all-purpose flour (plus extra for work surface)
- 1 cup Cottage cheese
- 1 egg (lightly beaten)
- 1 pinch salt
- ¼ cup milk
- ½ cup sunflower oil
- 1 ½ Tbsps Baking powder
- For Topping
- 1 ⅓ cups prepared Pizza Sauce
- 2 cups button Mushrooms (cleaned and sliced)
- 1 Fennel bulb (washed; quartered and cut into slices)
- ½ cup pitted black olives
- ⅔ cup Parmesan (freshly grated)
- 1 tsp sweet paprika
- 2 Tbsps olive oil
- fresh Basil (for garnish)

For Quick Pizza Dough:

Preheat oven to 400º F. Grease a rimmed rectangular (15-inch x 10-inch x 1-inch) baking pan.

Combine ingredients in a large mixing bowl, until dough holds together. Turn dough out onto a floured work surface, and knead until dough is no longer sticky. Roll dough out into a large thin rectangular shape, creating an edge. Place in prepared baking pan.

Spread pizza sauce over prepared crust. Top with sliced mushrooms, sliced fennel, and black olives. Sprinkle with grated Parmesan cheese, dust with paprika and drizzle with olive oil.

Bake in preheated oven for 20 minutes, or until the crust is golden brown and the pizza is cooked through. Garnish with fresh basil leaves and serve.
