Mushroom Omelette Rolls

- 4 ozs shiitake mushrooms
- 2 scallions
- 1 pc fresh ginger (about 8 grams)
- 1 Tbsp Sesame seeds
- 3 eggs
- 1 Tbsp light soy sauce (or a little less, to taste)
- 1 Tbsp sesame oil
- Chives (to taste)
Trim shiitake mushrooms, remove stems and cut caps into thin slices. Trim scallions, rinse and cut into thin rings. Peel ginger and finely chop.
Toast sesame seeds in a dry pan until light brown. Remove from heat and let cool.
Whisk eggs in a bowl with the soy sauce and 2 tablespoons water.
Heat the sesame oil in a non-stick pan. Sauté mushrooms over high heat. Add scallions and ginger and cook briefly.
Pour the egg mixture into the pan and let thicken over medium heat.
Slide omelet from the pan and let cool slightly. Carefully roll, cut into thick slices and sprinkle with sesame seeds. Garnish to taste with chive stalks.
