500 grams Pastry flour
¼ liter lukewarm milk
100 grams sugar
100 grams raisins
1 pinch ground Cardamom
1 pinch Ground cinnamon
½ organic lemon (zested)
64 blanched almonds
1 egg
1 egg yolk
50 grams butter
½ teaspoon cinnamon
4 tablespoons sugar
1 liter Frying oil

Preparation steps

Place the flour in a bowl, make a well in the center, crumble in the yeast and mix with a little milk and 1 teaspoon sugar. Cover and let rise for 25 minutes. Rinse the raisins until hot water, drain and set aside 64 pieces for the eyes. Stir the remaining raisins and sugar into the dough along with the spices, lemon zest, egg and egg yolk. Add more milk, as needed. Cover and let rise for 40 minutes. Divide the dough into 32 equal-sized balls and shape into mouse bodies. Cover and let rest for 15 minutes.

Heat the oil in a deep-fryer to 175°C (approximately 350°F). Working in batches, deep-fry the mice until golden brown, around 3 minutes per side. Remove and drain on paper towels. Combine the cinnamon and sugar, add the mice and toss to coat. Stick the almonds into the mice for ears and the raisins for eyes.
