- 800 grams Chicken breasts
- 4 Tomatoes
- 1 onion
- 2 garlic cloves
- 2 Tbsps olive oil
- 1 tsp freshly grated ginger
- 1 tsp ground Cumin
- 1 tsp ground Turmeric
- 200 milliliters Chicken broth
- 100 grams pickled lemons (canned)
- 100 grams black Olives (pitted)
- 2 Tbsps freshly chopped cilantro
- 2 Tbsps freshly chopped parsley
- 1 Tbsp scallions

Preparation steps

Rinse the chicken, pat dry and cut into small pieces. Rinse the tomatoes, cut into quarters, remove the seeds and chop. Peel and finely chop the onion and garlic. Sauté together in hot oil until glassy. Add the chicken and brown slightly for 3-4 minutes. Add the ginger, cumin and turmeric and sauté. Pour in the broth. Cut the lemon in half, scrape out the pulp with a spoon, chop and cut the peel into strips. Add the olives and lemon to the chicken and simmer gently for 4-5 minutes.

Stir in the herbs, season with salt and pepper and serve.
