2 Tbsps olive oil
1 onion (finely chopped)
1 clove garlic cloves (finely chopped)
1 red chili pepper (deseeded and finely chopped)
1 bay leaf
4 cups vegetable stock (or water)
1 small Cabbage (shredded)
2 cups canned Tomatoes (chopped)
2 cups canned chickpeas (garbanzos)
2 Tbsps chopped parsley
1 cup grated Parmesan

1 Cutting board, 1 Large knife, 1 Bowl, 1 Small knife, 1 Citrus juicer, 4 Wooden skewers, 1 Wooden spoon, 1 Small bowl, 1 Pot, 1 Non-stick pan

Preparation steps

Heat the oil in a pan and gently cook the onion until soft but not brown. Add the garlic and chilli and cook for 1 minute then add the bay leaf and pour over the stock or water.

Bring to a boil then add the cabbage, tomatoes and chickpeas, bring to a boil and simmer for 10 minutes or until the cabbage is tender.
3.
Season with salt and pepper and serve with the parsley and Parmesan scattered over.
