250 grams cooked shrimp (in water)
8 Cherry tomatoes
8 large Lettuce
400 grams Natural yogurt
2 Tbsps lemon juice
1 tsp Mustard
Sea salt
1 Tbsp parsley (chopped)

Preparation steps

1.

Drain shrimp well. Rinse peaches, cut in half, remove pits and cut into cubes. Rinse lettuce leaves and tear into bite-sized pieces. Rinse and halve the cherry tomatoes.

2.

Mix together peaches, shrimp, lettuce and tomatoes and divide over 2 or 4 bowls. Mix yogurt with lemon juice, mustard and parsley and season with sea salt. Pour yogurt dressing over the salad. Serve any remaining dressing in a separate bowl.
