- 1 ½ ozs Yeast
- ¼ cup sugar
- ⅞ cup warm milk
- 4 ½ cups all-purpose flour
- 1 egg
- ¼ cup soft butter
- ½ tsp unwaxed lemon zest (grated)
- 1 cup dried Apricot (chopped)
- 2 Tbsps Marmalade
- all-purpose flour (for the work surface)

Preparation steps
1.
Dissolve the yeast and the sugar in the milk. Add the flour, egg, butter, salt and lemon zest and mix with a hand whisk with dough hook attachments to form a medium-firm dough. Knead until the dough comes away from the sides of the bowl then cover and leave to rise in a warm place for around 1 hour.

To make the filling, mix the apricots with the marmalade.

Knead the dough well on a floured work surface and split into around 20 portions. Shape into balls, press flat and place a tbsp of jam in the middle. Reshape into balls. Cover and leave to rise for another 15 minutes.

Fry the doughnuts on all sides in hot clarified butter (approx. 170°C) for 3-4 minutes until golden brown. Remove with a draining spoon and pat dry with kitchen paper. Leave to cool.
5.
Serve dusted with icing sugar.
