- 200 grams green Beans
- 50 grams Bacon
- 1 onion
- 1 stalk Leeks
- 2 carrots
- 2 Tbsps olive oil
- 1 Vegetable broth
- 150 grams Orecchiette pasta
- salt
- peppers (from the mill)
- cayenne pepper
- 2 tsps finely chopped thyme

Preparation steps

Rinse and halve beans and blanch and in boiling, heavily salted water for 2-3 minutes. Drain. Rinse with cold water and drain again. Cube the bacon, then peel and finely chop the onion. Rinse and cut the leeks into rings. Peel and chop the carrots.

Heat the olive oil in a pan, fry bacon and onions in it briefly, add the remaining vegetables and cook for about 5 minutes. Pour in the broth and bring to a boil. Let simmer for 10 minutes. Stir in the noodles and continue to cook the soup until the noodles are tender. Season with salt, pepper, cayenne pepper and thyme.
