Preparation

Whip egg whites with salt and lemon juice until frothy. Gradually add sugar and continue to beat until the mixture turns shiny. Place walnut-sized piles on a baking sheeet lined with parchment paper.

Place on middle rack and bake at 120°C (approximately 250°F) for about 45-60 minutes. Leave the oven door open a bit for the last few minutes. The meringues should be a little soft and turn slightly golden.
