- 100 grams very thin Prosciutto (slices)
- 150 grams Goat cheese
- 1 honeydew melon
- 5 Tbsps olive oil (plus more for the pan)
- 100 grams Arugula
- 2 Tbsps Sherry vinegar
- 3 Tbsps Orange juice
- salt
- freshly ground peppers

Preparation steps
1.
Rinse arugula, trim, cut off thick stems and shake dry.
2.
Whisk sherry vinegar, olive oil, orange juice, and salt and pepper to taste into a salad dressing.
3.
Cut melon in half, remove seeds and dice the flesh.
4.
Heat a little olive oil in a non-stick pan.
5.
Add goat cheese slices and cook until warmed, but not brown.
6.
Mix arugula with the salad dressing and arrange on a platter with the melon, prosciutto and warmed goat cheese.
