Melon Salad with Shrimp
- For the melon and shrimp
- Charentais melon (small)
- honeydew melon (small)
- 400 grams more shrimp (ready to cook)
- peppers (freshly ground)
- 2 tablespoons vegetable oil
- 1 scallion
- 1 Red chile pepper
Halve melons, remove seeds, cut into slices, and remove rind. Cut melon into slices or bite-sized pieces. Rinse, trim and cut scallion crosswise into thin rings. Rinse and halve chile, remove seeds and ribs and cut into thin strips.
To make dressing: Season lime juice with salt and pepper. Whisk in olive oil and stir in scallion and chile.
In a large skillet, cook shrimp in hot oil, 1-2 minutes per side. Season with salt and pepper.
To serve, place melons on plates, top with shrimp and drizzle with dressing. Serve garnished with lime zest.
