½ handful mint (morocco)
1 large muskmelon
200 grams shrimp (pre-cooked, peeled and de-veined)
1 Tbsp Raspberry vinegar
2 Tbsps lemon juice
1 tsp honey
1 pinch cayenne pepper
Sea salt
150 grams Feta

Preparation steps

1.

Rinse the mint and shake dry. Cut the melon in half and scrape the seeds out. Cut the flesh from the shell, chop into fine columns and arrange on plates.

2.

Rinse the shrimp and drain well.

For the dressing, combine the raspberry vinegar with the lemon juice and honey and season with cayenne pepper and salt.

3.

Stir the mint into the dressing and then add the shrimp. Spread over the melon pieces.

Serve the salad showered with small cubes of feta cheese.
