- 400 grams cooked potatoes
- 200 grams Mortadella
- 1 onion
- 1 garlic clove
- 200 grams Ground beef
- 200 grams Ground veal
- 200 grams ground pork
- 2 eggs
- 50 grams grated Parmesan
- 3 Tbsps breadcrumbs
- salt
- freshly ground peppers
- 150 grams Pancetta (thinly sliced)
- 2 stems Sage
- olive oil

Preparation steps
1.
Preheat the oven to 180°C (approximately 350°F) convection. Grease 4 loaf tins with oil.

Peel the potatoes and dice finely. Dice mortadella into small cubes. Peel the onion and garlic and sauté briefly in 1 tablespoon oil. Place in a bowl with the mortadella and the potatoes. Add ground meats, eggs and Parmesan and mix well to form a dough. Add breadcrumbs to make the mixture easy to shape. Season with salt and pepper. Fill the ramekins with the ground meat mixture and cover with pancetta and sage. Brush with a little oil. Bake in the oven about 45 minutes. Unmold and serve.
