Preparation steps

1.

Soak roll in lukewarm water. Peel onion and garlic and finely chop. Mix with meat, eggs, parsley and squeezed bread and season with salt and pepper. Form into meatballs and fry in butter and vegetable oil on all sides.

2.

Rinse eggplant, cut off ends and cut lengthwise into thin slices. Lightly salt the slices, let stand for 10 minutes, rinse in water, pat dry and fry in batches in olive oil.

3.

Dice the cheese. Tear lettuce into bite-sized leaves and line a plate with it. Wrap each meatball with a slice of eggplant, top with a piece of cheese and a black olive, skewer with wooden toothpicks and arrange on the lettuce.
