Preparation steps

1.

Rinse salmon fillets, pat dry and, if necessary, pluck out bones with tweezers. Place fish in a bowl.

2.

Rinse cilantro, shake dry, pluck leaves, and chop finely. Roughly crush coriander and mix with cilantro, ginger, sugar, and salt. Spread the herb mixture on both sides of the fish.

3.

Wrap the salmon in plastic wrap, put on a board and top with a weight (such as a can of food). Cure the salmon for 2 to 3 days in the refrigerator. To serve, cut diagonally into thin slices and arrange on arugula leaves.
