- For the meatballs
- 250 grams Gravlax
- 1 Tbsp freshly chopped Dill
- 2 Tbsps grapeseed oil
- 1 Tbsp lemon juice
- freshly ground peppers
- 1 Cucumber
- salt
- 2 Tbsps White vinegar
- 3 Tbsps olive oil
- 1 Tbsp Lemon peel
Preparation
1.
Peel onion and cut into fine cubes.

Rinse salmon, pat dry and cut into small cubes. Combine with dill, onion, grape seed oil and lemon juice. Season with pepper and make small balls out of the mixture.

Rinse and halve cucumber, cut into thin slices. Season with salt, let stand for 20 minutes and pat dry. Combine vinegar with 3 tablespoons of oil, season with salt and pepper. Combine dressing with cucumber.
4.
Place cucumber salad into bowls, top with salmon balls and sprinkle with lemon zest. Serve accompanied by toasted bread, if desired.
