1 sprig mint
1 Mango
1 Tbsp honey
2 tsps lemon juice
200 milliliters Coconut milk
400 grams Yogurt (0.1% fat)
1 handful Ice cubes

Preparation steps

Toast the cashews in a pan then remove from the heat. Cool slightly, then coarsely chop.

Rinse the mint, and remove the leaves from the stems. Peel the mango, and cut the pulp from the stone. Puree the mango with the mint, honey, lemon juice, coconut milk, and ice cubes in a blender. Stir in half of the nuts and the yogurt. If the mixture is too thick dilute it with up to 150 ml (approximately 5 ounces) of water. Pour into glasses, garnish with the remaining nuts, and serve.
