- 150 grams lamb's lettuce
- 500 grams purple potato
- 100 grams button Mushroom
- 2 Tbsps Pumpkin seed
- 2 Tbsps sunflower oil
- 4 Tbsps White vinegar
- 4 Tbsps grapeseed oil
- 1 tsp hot Mustard
- 1 pinch sugar
- salt
- freshly ground peppers

Preparation steps
1.
Rinse, trim and drain the mache (lamb's lettuce).
2.
Scrub the truffle potatoes and rinse well, then cut into cubes. Place on a baking sheet lined with parchment paper and sprinkle with sunflower oil. Season with salt and pepper and bake in a preheated convection oven at 200°C (approximately 400°F) for about 15-20 minutes, until golden brown.

Trim the mushrooms and cut in half. During the last 10 minutes of the potato cooking time, add the mushrooms and continue to cook.
4.
Mix the white wine vinegar with grape seed oil, mustard and sugar and season with salt.
5.
Arrange the salad on plates and top with the potatoes and mushrooms. Drizzle with the dressing and serve sprinkled with pumpkin seeds.
