400 grams macaroni
1 kilogram Tomatoes
2 carrots
2 stalks Celery
2 onions
2 garlic cloves
6 Tbsps olive oil
salt
freshly ground peppers
½ bunch oregano (finely chopped leaves)
4 Tbsps Parmesan (freshly grated)

Preparation steps

1.

Blanch the tomatoes, remove the peel, and cut in half. Remove the seeds and finely dice.

Rinse and thinly slice the celery.

3.

Peel and finely chop the onion.

4.

Peel the garlic, and pass through a press. Heat the olive oil in a pan. Sauté the onions, garlic, tomatoes, and celery. Season to taste with salt, then deglaze with some water. Simmer the mixture, stirring occasionally. If necessary, add some water.

5.

Cook the macaroni in boiling salted water until al dente, then drain thoroughly.

6.

Mix the oregano into the sauce, and season to taste with salt and pepper. Mix in the pasta, and toss to combine. Transfer the pasta to plates, top with the grated parmesan cheese, and serve.
