For the muffins
0.333 cup butter (melted)
1 egg
¾ cup plain Yogurt
1 Lime (juice and finely grated zest)
2 ¼ cups all-purpose flour
1 Tbsp Baking powder
¾ cup sugar
For the lime buttercream
1 cup unsalted butter
4 cups powdered sugar
2 Tbsps Lime juice
To decorate
1 Lime (thinly sliced)
2 eating Apple
1 Tbsp Lime juice

Preparation steps

1.
For the muffins: heat the oven to 180°C (160° fan) 350°F gas 4. Line 10 holes of a muffin tin with non-stick baking paper.

Mix together the butter, egg, yoghurt, lime juice and zest in a mixing bowl.

Sift in the flour, baking powder and sugar. Stir until only just combined.

Spoon the mixture into the paper cases and bake for about 25 minutes until golden and risen. Cool in the tin for 5 minutes, then place on a wire rack to cool completely.

For the lime buttercream: beat the butter until soft. Sift in the icing sugar and beat until light and fluffy, then slowly beat in the lime juice.
6.
Spoon into a piping bag and pipe a swirl on each cake.
7.
To decorate: cut the lime slices in half and place 1 half on each cake.
8.
Peel, core and thinly slice the apples. Sprinkle the slices with lime juice and toss well to coat.
9.
Arrange the apple slices on top of the cakes.
