- 1 ¾ cups granulated sugar
- 1 Tbsp all-purpose flour
- 1 Tbsp fine, yellow Cornmeal
- 4 fresh eggs
- ¼ cup milk
- ¼ cup butter (melted)
- 2 Tbsps Lemon peel (finely grated)
- 3 cups fresh lemon juice
- 1 unbaked, refrigerated Pie crust (9-inch)
- 1 cup heavy cream (whipped)

Preparation steps

Preheat oven to 375º F.

In a large bowl, combine sugar, flour and cornmeal. Stir well to blend, add the eggs and combine well. Add milk and mix well. Stir in the butter, lemon peel, and lemon juice.

Pour the filling into the pie shell. Carefully, cover the edges of the crust with aluminum foil to prevent burning. Bake for 30 minutes in preheated oven, remove foil and bake for an additional 15 minutes.
4.
Cool on a wire rack. Pipe whipped cream around the edge of the pie crust prior to serving. Serve.
