- 2 Fennel bulb
- salt

- olive oil
- 150 milliliters dry white wine
- 8 Mackerel (ready to cook à 100 g)
- 1 untreated lemon

Preparation steps

Preheat the oven to 200°C (approximately 400°F) convection.

Rinse fennel bulbs, trim and cut into thick slices. Set the greens aside for garnish. Place fennel slices in an oven-proof dish and season with salt and pepper. Drizzle with olive oil and bake until golden brown, about 10 minutes. Remove from the oven, turn the fennel slices and deglaze with the white wine. Rinse the mackerel, pat dry, season with salt and pepper and spread on the fennel. Slice lemon and spread on the fish. Drizzle with olive oil and bake for about 15 minutes in the oven.

Garnish with fennel greens and serve with potatoes and creme fraiche, if desired.
