1 Fennel
1 organic lemon
1 organic Lime
4 scallions
1 garlic clove
4 Cod (each about 180 grams)
2 sprigs Dill

100 milliliters dry white wine

Preparation steps

Preheat oven to 175°C (approximately 350°F).

Rinse beans, drain and snip off ends. Rinse fennel, cut in half, trim and thinly slice. Rinse scallions and cut into chunks. Peel garlic and cut into slices. Slice lemon and lime. Rinse fish, pat dry and cut into 4 pieces. Place in center of a piece of parchment paper measuring 30 x 30 cm (approximately 12 x 12 inches). Top with vegetables, garlic and dill. Spread citrus slices on top. Season with salt and pepper and drizzle with 1 tablespoon olive oil. Pour wine over and pull edges of paper together. Twist ends together to form a closed pocket. Place on a baking sheet and cook for 15-20 minutes.
