Preparation steps

Peel the shallot and cut into small cubes. Cook in oil until translucent. Rinse the lemon well, zest the shell finely and add to the shallot. Drain oil from the pan into a large vessel (shaker) and set shallot aside. Peel the lemon with a sharp knife carefully, removing the white skin.

Cut fruit fillets from the separation membranes and collect the lemon juice. Squeeze out the remaining juice from the lemon residues. Add the lemon juice and the fillets to oil. Add mustard, preserves and lemon pepper and puree with a hand blender. Mix in the shallot, season and place in small bowl.
