Ingredients

For the biscuits
1 ⅛ cups butter
¾ cup sugar
2 ¼ cups all-purpose flour
1 cup Rice flour
For the glaze
2 ½ cups powdered sugar
1 lemon (juice and grated zest)

Preparation steps

1.
Beat the butter and sugar in a mixing bowl until soft and light.
2.
Sift in the flour and rice flour and mix to a smooth dough. Form into a ball, wrap in cling film and chill for 30 minutes.

Heat the oven to 180°C (160° fan) 350°F gas 4. Line 2 large baking trays with non-stick baking paper.

Roll out the dough on floured surface about 4 mm thick and cut out rounds about 4cm|1 1/2" in diameter. Place on the baking trays.
5.
Bake for 10-15 minutes until just golden. Cool on the baking trays for a few minutes, then place on a wire rack to cool completely.
6.
For the glaze: sift the icing sugar into a bowl and stir in enough lemon juice to give a coating consistency. Spread over the biscuits and sprinkle with lemon zest. Leave to set.
