Preheat oven to 200°C (approximately 390°F).

Rince bream and pat dry. Slice lemon and stuff, with rosemary, into fish. Beat egg whites with lemon juice, stir in salt. Stir in enough water so that mixture is pliable but not too moist. Pour into bream.
Line a baking sheet with parchment paper, add almost half of the salt, top with fish and cover with remaining salt. Press in so that it adheres.
Roast bream for about 35 minutes. Remove, split bream and serve.
