- 1 l Chicken broth
- 4 thin stalks Leeks
- ½ bunch scallions
- 6 Tbsps Instant mashed potato (flakes)
- salt
- freshly ground peppers
- Nutmeg
- 150 grams Whipped cream
- 100 grams cooked ham (piece)
- 2 slices white bread
- 2 Tbsps butter

Preparation steps
1.
Clean leeks and scallions, rinse and cut the white and light green parts into rings. Add to the broth in a pot, bring to a boil, reduce heat and simmer for about 8 minutes. Stir in the mashed potato flakes and simmer for about 1 minute. Season with nutmeg, salt and pepper and stir in the sour cream (do not boil).

Cut the ham into small cubes.

Cut crusts off bread and cut bread into small cubes. Melt butter in a frying pan, add cubes and fry until browned. Remove from pan and drain on paper towels.
4.
Ladle the soup into bowls and serve sprinkled with diced ham and croutons.
