- 1 Lamb shoulder
- 2 onions (diced)
- 2 Tbsps clarified butter
- ¼ tsp ground saffron
- 1 bay leaf
- 2 tsps ground ginger
- salt
- freshly ground peppers
- 4 sprigs cilantro
- 200 grams almonds (shelled)
- 200 grams Figs (dried)

Preparation steps
1.
Rinse and pat dry meat, cut into 4-5 cm (approximately 2 inch) pieces. Heat butter in a saucepan and saute onions until soft. Season with saffron, ginger, pepper and salt. Add meat and brown on all sides. Add 1/2 liter (approximately 2 cups) of water, bring to a boil, add bay leaf, figs and almonds and simmer, covered, on low heat for approximately 1.5 hours.

Season to taste and serve.
