Lamb Chops and Zucchini

- 14 ozs green Zucchini
- 14 ozs yellow Zucchini
- 3 garlic cloves
- 1 sprig rosemary
- 1 handful mint
- 3 Tbsps olive oil
- 4 large Lamb cutlets
- salt
- freshly ground peppers
- 2 Tbsps sunflower oil
- fresh mint (for garnish)
Trim the zucchini, rinse, cut in half lengthwise and cut into long strips. Peel garlic and chop. Rinse the herbs and shake dry. Cut the mint leaves into strips and chop the rosemary.
Heat the olive oil in a large skillet. Cook 2 cloves of garlic and zucchini with occasional swirling over medium heat about 10 minutes.
Meanwhile, sprinkle the lamb chops with the rosemary. Heat the sunflower oil in a pan and cook the chops on each side for 2-3 minutes. Season with salt and pepper.
Mix the mint into the zucchini and season with salt and pepper. To serve, arrange the lamb and zucchini on plates and garnish with mint.
