- ½ cup Margarine (softened)
- ½ cup caster sugar
- ⅔ cup self-rising flour
- 2 large eggs
- 1 tsp vanilla extract
- ½ cup sliced almonds
- 1 cup double cream
- 2 cups Strawberry Jam
- ½ cup powdered sugar
Preparation steps

Preheat the oven to 170°C(150° fan)|325F|gas 3. Grease and line a 30 cm|12" x 18 cm|7" x 2 cm|1" jelly roll pan with a sheet of greaseproof paper.

Beat together the margarine, sugar, flour, eggs, and vanilla extract in a mixing bowl until thick and pale; 3 minutes.

Spread the batter over the lined pan, making sure it is level. Top with the flaked almonds and bake for 18-22 minutes until golden, risen, and springy to the touch.

Remove to a wire rack to cool. Beat the cream until softly peaked in a clean mixing bowl.
5.
Flip the sponge over and top with the whipped cream, and then then jam. Roll the sponge, peeling away the greaseproof paper at the same time.
6.
Lift the roll onto a serving platter and dust liberally with icing sugar before slicing and serving.
