300 grams dried small white Beans (such as cannellini)
1 onion
2 garlic cloves
2 sticks Celery
olive oil
1 sprig rosemary
1 sprig thyme
1 sprig mint
1 sprig Lavender
1 sprig Lovage
salt
600 grams clam
300 grams Tomatoes
freshly ground peppers
lemon juice
2 Tbsps freshly chopped parsley

Preparation steps

Soak the beans overnight in water.

Peel the onion and garlic and chop finely. Rinse and trim the celery and cut into thin pieces. In a saucepan, heat 2 tablespoons of oil and sauté the onion with the garlic until translucent. Add the celery and cook briefly. Drain the beans, add to the vegetables, pour in the broth and simmer for about 1 hour over medium heat.

Rinse the herbs, shake dry and tie together with kitchen string to make a bouquet garni.

After half of the cooking time, add the bouquet garni, season with salt and continue to cook.

Rinse the clams, sort, and throw away any open shells.

Blanch the tomatoes, peel, quarter, core and cut into small cubes.

Add the clams and tomatoes to the pot, simmer for about 5 minutes and season with lemon juice.

8.

Remove any shells that have not opened. To serve, spoon portions of the soup into bowls and garnish with freshly chopped parsley.
