Honeydew, Mozzarella and Cherry Tomato Skewers
Finely grate the lime zest and squeeze the juice. Whisk the lime zest, lime juice and thyme leaves together and season with salt and pepper. Toss with the mozzarella then chill for 30 minutes.
Cut melon into wedges, remove the seeds and cut off the rind. Cut the flesh into bite-sized pieces. Rinse the tomatoes. Remove the mozzarella balls from the marinade.
Skewer the melon, mozzarella and tomatoes onto wooden skewers.
Whisk the honey into the marinade and brush over the skewers. Serve.
