Ingredients
Herb Omelette with Smoked Salmon
Wash cucumber and cut diagonally into thin slices. Set aside a few cucumber slices, lay the rest flat on plates and sprinkle with salt.
Cut salmon into cubes. Cut cress from the beds. Wash dill, shake dry and chop.
Whisk eggs with salt, pepper, mineral water and kefir and stir in dill. Heat 2 tablespoons of oil in a frying pan. Pour in half of the egg mixture and fry over low heat for 3-4 minutes to form an omelet. Fry a 2nd omelet with the remaining egg mixture.
Top omelets with salmon cubes, cucumber slices and cress, fold, cut in half and arrange on cucumber slices.

Eggs provide us with a lot of high-quality protein as well as fat-soluble vitamins. Salmon scores with polyunsaturated fatty acids. Dill, the ancient culinary and medicinal plant, has a mild nerve calming and antispasmodic effect. It is therefore good against flatulence. Its essential oils also stimulate gastric activity and aid digestion.
