- 28 ozs Beef (from the leg)
- 2 cloves garlic cloves
- 2 ⅓ cups mixed Dried bean (red, white and black)
- 2 Tbsps flour
- 3 Tbsps Oil
- 1 Tbsp tomato puree
- 1 Tbsp paprika (hot)
- 2 chili peppers
- cayenne pepper
- 2 cups meat Broth
- 1 bunch scallions
- salt

Preparation steps
1.
Soak the beans overnight.
2.
Wash, dry and chop the beef.
3.
Peel and finely chop the garlic.
4.
Wash and finely chop the chilies.
5.
Wash and trim the scallions, shred the green parts and put in cold water. Slice the white parts at an angle.
6.
Heat the oil and brown the meat on all sides. Add the garlic and tomato puree, dust with flour and stir in the broth. Add the beans, paprika and chilies and simmer for about 1.5 hours. Add more liquid if necessary and stir occasionally. Add the scallion rings for the last 30 minutes. Season with salt and cayenne pepper and serve garnished with the shredded scallions.
