Preparation

Blanch tomatoes in boiling water for a few seconds, then rinse, peel and cut into wedges.

Rinse, trim and cut celery diagonally into 4 cm long (approximately 1 1/2 inch long) pieces.

Cut romanesco into smaller pieces, as needed.

Combine vegetables and vegetable broth, season with salt and pepper and cook at 100°C (approximately 210°F) in an electric steamer, 12-14 minutes.
