- 1 ¼ cups Bulgur
- 1 Tbsp olive oil
- 4 duck legs
- salt
- peppers
- 3 scallions (thinly sliced)
- 6 cups mixed Leaf lettuce variety
- ½ cup black Olives
- 18 cherry Tomatoes (cut in half)
- ¼ Cucumber (finely diced)
- 3 Tbsps fresh, chopped cilantro
- 2 Tbsps fresh Basil (torn)
- ⅜ cup extra virgin olive oil
- ¼ cup balsamic vinegar
- fresh Chives (to garnish)

Preparation steps
1.
Place bulghur wheat in a bowl and cover with boiling water. Leave to soak for about 30 minutes.
2.
Meanwhile, heat olive oil in a large sauté pan. Season the duck with salt and pepper. Cook over medium heat skin side down for 4 minutes.
3.
Turn and cook for an additional 4 minutes or until cooked to your liking. Allow the duck to rest while you prepare the rest of the salad.
4.
Combine the remaining ingredients in a bowl and toss well. Slice the duck and lay on top of the salad. Garnish with chives.
