- 2 cups seedless Cucumber (peeled and diced)
- 2 Tbsps fresh cilantro (finely minced)
- ½ cup Buttermilk (divided)
- ½ cup plain non-fat yogurt
- salt (to taste)
- peppers (to taste)
- Cucumber (dill; or cilantro for garnish; if desired)

Preparation steps
1.
Place cucumbers, cilantro and a 1/4 cup of the buttermilk in a blender. Purée until cucumber is smooth.
2.
Blend in the remaining buttermilk and yogurt until smooth. Add salt and pepper to taste.
3.
Chill before serving. Garnish with cucumber slices, dill or cilantro, if desired.
