For meat
2 Saddle of hare (larded with bacon)
½ l Red wine
1 carrot
1 onion
1 Herb bouquet
2 Tbsps butter
1 Tbsp vegetable oil
200 grams Sour cream
150 milliliters Game stock (from a jar)
4 halved Pear (canned)
4 Tbsps
For almond croquettes
1 pkg Croquette
½ l water
100 grams slivered almonds
vegetable oil (for cooking)
salt
peppers

Preparation steps

For meat: trim meat and place in a bowl. Rinse and peel carrot, chop finely. Peel and chop onion. Add carrot and onion to meat, season with salt and pepper. Add red wine and marinate meat for about 2 hours. Remove meat from marinade and pat dry. Simmer marinade until reduced in half. Season meat with salt and pepper. Heat oil and butter in a roasting pan, sear meat on all sides. Roast in preheated oven at 250°C (approximatley 475°F) for about 15 minutes, basting with marinade often. Remove meat from oven and wrap in aluminum foil. Strain cooking juice through a sieve, add broth and simmer for a few minutes. Add sour cream and season with salt and pepper.

For the croquettes: prepare croquette mixture according to package instructions with water, roll in flaked almonds. Heat oil in a pan and cook croquettes until golden brown on all sides.

Cut meat into serving portions, arrange on plates and place pear halves next to meat. Top pears with cranberries. Add croquettes to plates and serve accompanied by sauce.
