This refreshing salad is light and relatively low-calorie, hoewever the addition of protein-packed ham makes it more filling than you might imagine.

Edible flowers and ham make this salad a perfect starter for your Easter dinner.

3 cups mixed salad (e. g. loose-leaf lettuce, butterhead lettuce, Batavia, radicchio)
1 onion
1 cup Parma ham (thinly sliced)
1 tsp medium-hot Mustard
3 Tbsps white wine vinegar
2 Tbsps vegetable stock
1 tsp honey
4 Tbsps olive oil
salt
peppers
½ cup Parmesan (a piece)
Daisy (to serve)

Preparation steps

1.
Wash and sort the salad leaves, shake dry and tear into bite-sized pieces. Peel and thinly slice or dice the onion. Cut the ham into strips 3-5 cm wide.

Put the mustard, vinegar, stock, honey and olive oil into a salad dressing shaker and shake well. Season with salt and pepper.
3.
Mix the salad leaves with the onion and divide between 4 dishes. Add a little ham to each dish and sprinkle with salad dressing. Shave Parmesan over the salad and serve scattered with daisies.
