Halloumi Vegetable Skewers

- 200 grams Halloumi cheese
- 1 Zucchini
- 2 Red onions
- 1 Red Bell pepper
- 1 yellow Bell pepper
- bay leaves (to taste)
- 1 tsp freshly chopped oregano
- 1 tsp freshly chopped thyme
- 4 Tbsps olive oil
- 1 pressed garlic clove
- salt
- freshly ground peppers
Cut cheese cut into 2 cm (approximately 3/4 inch) cubes. Rinse the zucchini, trim stem and cut into 1 cm (approximately 1/2-inch) thick slices. Peel the onions and cut into quarters. Rinse the bell pepper, remove core and cut into bite-sized cubes.
Thread ingredients in an alternating manner on skewers, placing bay leaves between ingredient layers, if desired.
Mix herbs with oil, garlic and salt and pepper to taste. Coat the skewers with the mixture. Infuse briefly.
Prepare and preheat the charcoal grill or preheat the oven broiler.
Cook skewers on the grill or under broiler (with baking sheet underneath) and broil until golden brown, turning frequently, 10-15 minutes. Serve hot.
