1 yellow Bell pepper
2 onions
1 Zucchini
2 garlic cloves
6 Tbsps olive oil
Sea salt

250 grams Halloumi cheese (piece)

Preparation steps

Preheat the grill.

Rinse and dry the thyme, then remove the leaves.

Trim the mushrooms, and wipe with a kitchen towel. Rinse and halve the peppers. Remove the seeds and membranes, and cut into 2-3 cm (approximately 3/4 - 1 inch) pieces. Peel the onions and cut into wedges. Rinse and trim the zucchini. Slice lengthwise into 0.4 cm (approximately 1/10) pieces.

Peel and finely chop the garlic, then mix with the thyme and oil. Season to taste with salt and pepper.

Roll the zucchini slices, then place on wooden skewers with the mushrooms, pepper, and onions.  Slice the cheese into 1 cm (approximately 1/2 inch) thin pieces, and drizzle with the herb and garlic oil. Place on the grill and cook for 5-8 minutes, turning occasinally. Serve if you'd like with grilled pita bread and lemon wedges.
