3 Tbsps Rice vinegar
3 Tbsps low-sodium soy sauce
1 Tbsp water
1 tsp dark sesame oil
¼ tsp red peppers (crushed)
2 cups bagged Baby spinach
1 small Red onion (quartered and sliced)
2 ⅓ cups crimini Mushrooms (washed)
32 ozs Salmon fillet
salt (to taste)
peppers (to taste)

Preparation steps

1.
In a small bowl, mix the first five ingredients together until blended well to make vinaigrette. Set aside.

In a large bowl mix the baby spinach, red onion and mushrooms.
3.
Coat the grill rack with cooking spray before starting the grill. Heat grill to high heat. Place salmon skin side down on grill rack. Grill, covered, over medium-hot heat for 15-20 minutes or until fish flakes easily with a fork. Season with salt and pepper.
4.
Serve salmon over salad and dress with vinaigrette.
